    Chef demanding RSD 140,000 salary from Belgrade restaurant, owner says: “He is not neurosurgeon”

    The coronavirus pandemic, but also the summer season has put many caterers in a position that they have a serious staff shortage.

    There is a lack of chefs, waiters, reception workers, and as recently announced by the Association of Hotel and Restaurant Industry of Serbia (HORES), hoteliers in Serbia will seek state assistance for hiring workers, in the form of employment benefits, exemptions from taxes and contributions, in order to provide higher salaries and prevent qualified personnel from leaving the country.

    Many are trying to „turn“ this situation into a favourable one for them and attempt to use staff shortages on the market to achieve for themselves better working conditions, i.e. higher salaries.

    Lately, a lot of public attention was given to a post on social media, about a chef who asked for a salary of RSD 140,000 in a Belgrade restaurant.

    Namely, the „Pavle Korcagin“ restaurant first announced that they were expanding their team due to the increased volume of work, i.e. that they wanted to hire a chef and a sous-chef, for a salary between RSD 60,000 and 80,000, i.e. RSD 45,000 to 50,000.

    „We appreciate everyone’s work, but a neurosurgeon has a lower salary, and you do not perform surgeries on chickens. We too want to sell beer for RSD 600 RSD, but we are unable to do so“, they said in a Facebook post on their page, after one of the applicants had asked for RSD 140,000.

    As the owner of the restaurant, Vojin Cucic, explains for the BIZLife portal, they are trying to balance the final position from the point of view of caterers, workers and guests.

    „One would have to know and satisfy all three categories, in order to reach an objective solution rationally.“ We have announced that starting salary for a chef is between RSD 60,000 and 80,000. The salary would increase over time, if the employee meets our expectations, and we do the same for him, of course. „We cannot give someone a salary that is higher than the salary of a person who has been employed in our facilities for years,“ he explains the situation.

    The summer months are also the period when staff goes to the coast, where salaries are higher, and many also go on cruise ships.

    „This creates a vicious circle of supply and demand. Some of them are really looking for a higher salary, but younger people mostly want adventure and coast accommodation. It is certainly impossible to offer the same salary in a facility where beer is sold for EUR 1.5, as is the case with us, and at a price of six euros, as is the case with facilities on the coast“, the interlocutor explained.

    When it comes to how the corona crisis impacted their work, Cucic says that summer months are a refreshment, but that the crisis certainly affected their business operations.

    He says that their business policy was such that they would not fire anyone, but even increased the number of employees.
